Barbora loves nature, aesthetics and spends a large part of the year by the ocean. In her work, she connects food with art, placing great emphasis on the ethical origin of raw materials. Today she shared with us a recipe for simple, delicious almond cookies, which consist of only a few of Barbora's favorite ingredients.
Cookie dough.
250 g of finely ground almonds
100 g cane sugar
15 g of chia seeds + 30 ml of water
15 ml of water
30 ml honey
8 g cinnamon, vanilla
Procedure.
.Mix the chia seeds with water and let them swell for 10 minutes.
Mix all the dry ingredients in a bowl and then add the chia mixture, honey and water.
.Mix thoroughly and work out the dough (it will be a little sticky).
.Let it sit in the fridge for at least two hours, ideally overnight.
.Preheat the oven to 160 degrees, roll out the rested dough between two pieces of baking paper to 3-4 mm and cut into the desired shapes (the dough is sticky, so help yourself with a cake spatula, which you keep dipping in warm water - like with a cake knife).
.Bake the cookies for 8-10 minutes (do not overcook them so that they are hard and bitter).
.While still warm, roll in ground cane sugar mixed with cinnamon and vanilla.
Candied orange peel.
1 organic orange (not chemically treated)
1 cup of water
1/2 cup cane sugar
Procedure.
.Wash and peel the orange.
Try to remove the inner white layer from the bark as much as possible.
.Cut into thin strips and boil in water so that the bark gets rid of bitterness, drain after a while.
.Then boil water with sugar and bark on a low flame.
Let it cook until the crust is ``transparent''.
.Take out one piece at a time and cover it a little with cane sugar.
.Place on baking paper and let dry overnight.
