"For me, the recipe for these bright green pancakes is the definition of a treasure in the kitchen. They are really simple and quick to prepare, they are good in the freezer, they are easy to digest and will richly nourish the whole family. It is possible to have the ingredients at home at all times, and I classify them as one of the fastest meals that are also full of vitamins and minerals. You can take them with you for lunch at work, for the children for a snack at school, or for the little ones in the stroller.
I will show you the magic of individual ingredients.
Protein is the basic building material for all our cells and at the same time an important dose of energy. I deliberately chose a combination of ingredients for the recipe, which are considered a pleasant source of protein in a plant-based diet - peas, hemp seeds, buckwheat flour and nori seaweed. Although by themselves they are not a full-fledged substitute for animal proteins, their combination is, in my opinion, a decent protein shake.
Peas are generally one of my favorite ingredients. I love how easy it is to prepare, that it tastes great on its own and is packed with goodness. In addition to protein, it contains a large amount of fiber, which supports the movement of food through our digestive tract and carefully pampers our intestines. It is also a vitamin firework. It contains, for example, beta-carotene, vitamin C, zinc, vitamin K or folate, as well as a lot of antioxidants and phytonutrients that protect our body from external influences or inflammatory diseases.
Hemp seeds are some of the most nutritious seeds in the game. In addition to high magnesium content, which is needed for perhaps all metabolic processes in the body, hemp seeds are a source of omega 3 and 6 fatty acids. Those in our body are anti-inflammatory and take care of heart and brain health.
I see seaweed as a proud representative of superfoods. They contain an unrivaled amount of minerals including iron, magnesium, iodine, zinc, manganese and many others. Nori is even a much more generous source of calcium than any dairy product. Calcium is an essential nutrient for the health of our bones and teeth and thus becomes extremely important during pregnancy, breastfeeding and growth.
Buckwheat is one of the exceptional plant sources of complete protein. This means that, in addition to the high fiber content, it also has a complete spectrum of amino acids, which mostly only proteins of animal origin have. This naturally gluten-free pseudocereal is known for its high content of rutin, which ranks among antioxidants that have an anti-inflammatory effect and lower blood pressure.
In addition, the color green supports our inner well-being and peace, and you can sell it to children as dinosaur pancakes.
Ingredients.
350 g of frozen young peas
2 eggs
4 tablespoons of hemp seeds spoon of buckwheat flour
2 tablespoons nori flakes
1⁄2 – 1 teaspoon of dried garlic sea salt
ghee for frying
arbitrary, but a great choice:
up to two spoons of beef grass-fed collagen
Procedure
Pour hot water over the frozen peas, let them cool for a while and strain. We repeat this process one more time and then let the peas drain properly or dry them on absorbent towels. An important step is to not make the dough too wet. Put half of the peas in a blender and mix roughly. Place the coarsely chopped peas in a larger bowl and set aside for a while.
Put the other half of the peas in the blender, add the eggs and blend to a smooth paste. Pour into the bowl with the roughly chopped peas and add all the other ingredients. Adjust the amount of garlic and salt to your taste. I really recommend using dried garlic, which I think works great in terms of flavor in this recipe. Put a spoonful of ghee on a hot pan with a thick bottom and fry it on both sides on a low flame. The pancakes are fragile, so make them smaller so that they can turn better and stick together. Don't skimp on the ghee. Thanks to a sufficient amount of fat, the pancakes will be beautifully crispy on the outside.
You can eat them alone, with full-fat Greek yogurt, kefir or sour cream. They will also work as part of a salad."
